Harrington House Scones

A recipe that I get asked for more than any other are the scones. Kind of crazy as they are the easiest thing for me and always delight. The trick are the additions which can be almost anything. I have tried pumpkin and spice(ease up a little on the liquid), rosemary and parmesian cheese, and dried fruits and nuts are the easiest, particularly dry blueberries, cranberries (with orange zest) and the obvious currants.

The basic recipe is as follows:

2 cups flour
1/3 cup sugarBlueberry Scones (640x480)
1 tbls baking powder
¼ tsp salt

Stir dry ingredients together with fork and add 1 ¼ cup heavy cream until the dough comes together. Knead 4 or 5 times into a loose ball and put on a cutting board. Shape to a flat 10 inch circle. Cut in to 12 wedges. Place on ungreased baking sheet, brush with heavy cream and a sprinkle of coarse sugar. Bake at 450 for 10-15 minutes.
